Continuing their journey into spontaneous fermentation, this release is a blend of 1, 2 and 3 year old beers. Burning Sky use a traditional turbid mash schedule followed by an extended boil and wild inoculation overnight in their coolship before transferring to barrels for a lengthy fermentation. Oaky, with a pleasing acidity, this beer is unique to the landscape in which it is made.
