An organic, medium-bodied and fruit-led Nero d'Avola full of classic flavours of dark almost roasted fruits - think black cherries and red and dark plums. There's some liquorice and then the finish hints at coffee and bitter chocolate. Manually harvested, macerated on skins for 8-10 days, fermented in stainless steel for 8-10 days. Aged in stainless steel vats for 6 months and then wooden barrels for a further 5 months. Neither fined nor filtered, with a small amount of sulphur added at bottling.
