The co-operative Valli Unite was born over thirty years ago, when three young men merged their vineyards and began a project to preserve the old way of farming.
The old ways were combined with a very modern belief in organic farming as the way of the future, as part of the wider project known as ‘contraction’, involving reducing the human impact on the natural environment. Viticulture is non-invasive, using old-fashioned sickles and manures from their cattle as well as green fertilisers composed of clover and weeds. Ottavio Rube Rosso is a blend of hand harvested, organic Barbera, Dolcetto, Croatina and a splash of Cortese, fermented with indigenous yeast and aged in cement tanks until bottling with minimal sulfur and no filtration. Fresh, crunchy, rich and just a little rustic, the addition of white juice (Cortese) brings an uplifting vibe to all the juicy red and black fruit and deep spice in this fantastic natural red. A wine that goes with everything.
