A beer/wine hybrid made in collaboration with Tillingham wines. Exale brewed a pale ale fermented with a clean ale yeast on Pinot Grigio whole bunch skins and stalks from Tillingham. The result is a complex aroma of hedgerow, melon rind, bramble and fruit compote. The natural yeast essence from the skins gives hints of clove and banana. It starts with sweet malt but finishes medium dry. It’s somewhere between a natural orange wine and a Trappist ale.
