The latest release from Brighton-based low intervention nomadic winemaker, Vindemiate. Dusky peach in colour with gentle haze from secondary fermentation in bottle. On the nose this gently sparkling Col Fondo presents apple crumble and custard, backed by red berries, citrus and just a hint of wet flint. On the palate crumble notes persist but the baked apple character gives way to bright, fresh rhubarb and redcurrant notes with a delicate creamy lemon curd undertone. Perfect with light dishes - think grilled fish with citrus, summer salads - or oily favourites such as fish and chips, charcuterie meats and pâtés. Whichever your preference serve with a generous portion of sunshine if at all possible!
