Fools Gold is a blend of three barrels filled in August 2021 and March 2022. Fermented with saison yeast, lachancea, lactobacillus and brettanomyces before ageing for seven months on carbonically macerated British apricots. This beer has picked up intensity and complexity in abundance. The aroma is full of dried apricot, wet stone and sweet almond. Rich flavours of overripe apricot, floral honey and marzipan are balanced by a refreshing citric acidity and a smooth, fruity finish. Drink this one fresh or age to see where the funk takes it!
