Wild Ale with Tayberries and Strawberries. Inspired by the Belgian Framboise, 2023's iteration of Spectral Lore is primary fermented with a Brettanomyces blend which produces intense juicy stone and tropical fruit flavours, before being refermented on 250g/l of Tayberries and an additional 80g/l of strawberries, both harvested around 12 miles from the brewery. Tayberries are a cross between raspberries and blackberries, named after the River Tay, which runs through Dundee where the berries were first bred. Whilst Framboise is traditionally brewed with raspberries, Holy Goat decided to use tayberries to showcase their intense raspberry character, vibrant pinkish red hue and huge aroma. Drink young or age, this will get weirder.
