Raison d’Être is the quintessential expression of cidermaking at Ross-On-Wye. Their philosophy in a single cider: clean, ripe, bittersweet apples wild fermented in oak casks, matured patiently and quietly, and bottle conditioned. The first vintage of Raison d’Être to feature cask fermentation in Irish barrels as opposed to Scottish, the 2021 Raison is defined by big, intense apple flavour, concentrated orange, and is at the beginning of a long journey where the flavour will continue to grow, develop and evolve. This is a cider with drinkability, complexity, and identity, that takes you on a journey from the first sip to the last, with the flavours evolving and developing across the palate. The result of two years of care and attention, this cider tells you the story of Ross-On-Wye's home - a story of fruit, tannins, and time.
