Orchard blend from Lower Porthamel farm, just 20 steps from Sobremesa's production site. This is an acid-driven cider made with a combination of different Welsh Heritage eating and cooking apples. A bȃtonnage during the fermentation process disturbed the lees; the cider then aged in its own lees for an extra 3 months. Sobremesa's approach to northern Spanish ciders!
