Hail is a session strength sour beer. Mashed with flaked oats and dextrin malt to give it more body, so it can be enjoyed as a sessionable. beer, without compromising on an enjoyable body . The beer is then sterilised in the kettle, before being co-pitched with Mammoth's house yeast Voss Kveik, and Lactobacillus Helveticus. Both strains operate at the same temperature range (high 30s celsius) , ensuring a fast fermentation over a matter of days rather than weeks, and a simultaneous lactic acid souring. Near the end of fermentation fruit puree was added, to compliment the tartness of the beer.
