Sustainably farmed Pinot Noir and Chardonnay grapes from Crouch Valley and Little Grange vineyards in Essex were destemmed and crushed together and left to soak for five days before being pressed to stainless steel and concrete tanks and a Georgian qvevri. Aged for eight months before bottling. No filtration, fining and only a minimal addition of sulphur at bottling. The result pours a brilliant strawberry hue, with notes of apricot and yoghurt and a lick of mineral. Bright yet juicy acid with layers of texture and a mouth-watering finish.
