Belgian Saison style cider blend. In the Autumn of 2023, a fermentation of local Braeburn juice went rogue, picking up big esters reminiscent of Belgian Saison. Ascension left this ferment to develop, ageing on lees for four months, before blending in a small portion of clean fermented Russet and Bramley cider.
