Casa Belfi is a certified biodynamic vineyard and winery in the Treviso province of Italy. The philosophy behind the project is the respect of natural processes and traditions. Manually harvested grapes go through whole bunch carbonic maceration before being left in contact with skins for 15 days. Natural yeast fermentation in stainless vats is followed by six months aging on less. Second fermentation happens in the bottle with no filtration or fining and no added sulphur. Super light and refreshing and packed full of juicy cherry and raspberry flavours. Well structured on the palate with integrated tannins and a mineral finish. A joy from start to finish.
