Will Davenport has been making wines for over 20 years at Limney Farm in East Sussex, an old dairy farm with buildings that made for easy conversion to their new winemaking purpose. Over the years the buildings have been extended to include a dedicated bottling area and temperature-controlled store, and Solar panels now generate enough electricity to run the whole winery. The site is south facing and sheltered with mainly clay soils. 
 
Manual harvested organic grapes (Auxerrois, Bacchus, Pinot Noir, Faber) are fermented in the traditional ancestral method where the first fermentation is finished in the bottle. A purely natural wine, fermented by natural yeasts with no added sulphites. Slightly cloudy, it has a slight yeast sediment adding a great yeasty edge to the fruit aromas. This Pet Nat is everything you want from a British sparkling wine. Light, fresh and elegant, with a soft stream of bubbles and delicate notes of apple, elderflower and English hedgerow, a slight cidery undercurrent and a superbly balanced acidity. The perfect summer drink.
